About the fish

The majority of the fish we supply is caught in our local port of Looe, a by-word for freshness and quality.  Looe is what is known as a “day” port.  This means that the fishing boats go out to sea, fish and land their catch within a twenty-four hour period.  Unlike most ports where fleets can often stay at sea for four or five days, the fish landed in Looe is less than twenty-four hours out of the water when it is bought by Tim on the auction for you.  He will also source fish from various locales – scallops harvested by divers in Scotland and sent down alive, exotic species from around the world (also to our exacting standards of freshness), local species from small day boats up and down the coast, oysters and fat rope-grown mussels from the Fowey river.
